Let's be honest: getting up in the morning is hard. When I hear the alarm go off in the morning, the only thoughts I have are usually not very positive. One of the problems I find the hardest about the morning is getting everything ready before I have to leave - I want to stay in bed for so long that I never have enough time.
Although I'm very lazy in the morning, I'm also the #1 Breakfast Advocate. Friends don't enjoy sharing their breakfast routines (or lack thereof) with me because most of them don't have time to eat. This usually launches me into a short speech starting with the words, "Breakfast is the most important meal of the day."
However, as my senior year of high school went on, I began to understand where they were coming from. I was always very fortunate to have a fantastic mom who not only stayed at home but often got up with my sister and I to make us breakfast. But, during the second half of the school year, she went back to work part-time and while this was great, she stopped getting up at the time we did, leaving my sister and I to fend for ourselves for food (which was harder than anticipated).
After many bowls of Cheerios, I began a quest to find quick breakfasts that were healthy and delicious. And lo and behold, I actually discovered quite a few new recipes to my breakfast repertoire. I was able to successfully make all of these breakfasts in less than 10 minutes, and with minimal mess. So if I can do it, you can do it to, right?
1. Oatmeal
And no, not the instant packets. I'm talking good "old-fashioned" or rolled oats. These oats aren't processed like the instant ones are and, surprise: they don't take any longer to make. Put a half cup of oats in a microwave-safe bowl with a cup of water and microwave for 2 minutes*. You can then add anything you want to the oats to make them taste delicious! My favorites are berries, honey, walnuts, or a little bit of brown sugar.

On this morning, I added raspberries and blueberries! |

2. Smoothie Bowls
If you've spent any time on Pinterest in the last year, you probably know what a smoothie bowl is. Known for their colorful and very aesthetic toppings, smoothie bowls are deceptively easy. Once you know what kind of smoothie you want, this recipe takes about ten minutes from start to finish.
First, blend your choice of fruits and/or veggies in a blender. I usually do a mix of strawberries, blueberries, and frozen tropical fruit instead of ice. You can also add Greek yogurt or peanut butter for some extra protein. Next, add a liquid like water or almond milk to help the mix blend better and blend until smooth.
After you have your smoothie poured into a bowl, you can decorate it however you want! This is the fun part, so don't hold back your creativity! My toppings of choice are fresh berries, granola, and chia seeds.
3. Avocado and Egg Toast
Another Instagram and Pinterest favorite, avocado toast looks great in pictures but tastes even better. My favorite part about this breakfast is that it can be made in 5 minutes! While you fry an egg in a pan, pop a piece of bread in the toaster. Cut up an avocado and mash the insides with a fork until smooth. When the toast is done, spread the avocado on the toast and sprinkle salt and pepper to taste. Finally, add the fried egg on top and voila, a fast and delicious eat! I like to add a small side of fruit to make it feel like a complete meal.
Breakfast shouldn't feel like a daunting task in the morning; the right breakfast should make you feel ready to tackle the day head-on. Bonus points if it tastes (and looks) great! ;)
Lots of love,
I can't wait to try the avocado, egg and toast recipe. Thanks for sharing!
